It is interesting to note that most humans see more detail in Black and White (or Gray scale), the reason that Ansel Adams Black and White Photographs are so beautiful.

As a general rule, color images are used in breast thermography to look for inflammation. Gray scale images are used for mapping blood vessel signatures.
